Mediterranean Turkey Burger

Juicy turkey patties packed with feta, fresh herbs and lemon, tucked into a toasted bun with a cool cucumber-yogurt sauce. A high-protein Mediterranean twist on the classic burger — light but seriously satisfying.

Method

  1. Finely dice half the red onion and grate the garlic. Coarsely grate the cucumber and squeeze out the excess water with your hands.

  2. In a bowl, combine the ground turkey, crumbled feta, breadcrumbs, egg, diced onion, garlic, parsley, mint, cumin, oregano, lemon zest, salt and pepper. Mix gently with your hands until just combined — don't overwork it.

  3. Divide the mixture into 2 equal portions and shape into patties about 2 cm thick. Press a shallow dimple into the centre of each so they cook evenly.

  4. Heat the olive oil in a non-stick pan over medium heat. Cook the patties for 5-6 minutes per side, until golden and cooked through (internal temp 74°C / no pink in the middle).

  5. Meanwhile, stir the grated cucumber into the Greek yogurt with a pinch of salt to make a quick tzatziki. Slice the tomato and the remaining onion.

  6. Toast the buns cut-side down for 1 minute. Spread tzatziki on the bases, layer on the spinach, turkey patty, tomato and onion, then close the buns and serve.
