Ground Beef Tacos
Warm corn tortillas loaded with seasoned lean ground beef, melting cheddar, crisp lettuce, and fresh tomato. A protein-packed Mexican dinner ready in half an hour.

Finely dice the onion and mince the garlic. Dice the tomato, shred the lettuce, and chop the cilantro. Cut the lime into wedges.
Heat the oil in a large skillet over medium-high heat. Add the onion and cook until softened, about 3 minutes, then stir in the garlic and cook for 30 seconds until fragrant.
Add the ground beef and cook, breaking it up with a spoon, until well browned, 5-6 minutes.
Stir in the tomato paste, cumin, smoked paprika, chili powder, and oregano. Cook for 1 minute to toast the spices.
Pour in the water, season with salt and pepper, and simmer until the liquid has reduced and the beef is glossy, about 4 minutes. Squeeze in the juice of half the lime.
Meanwhile, warm the tortillas in a dry pan or directly over a flame for about 20 seconds per side until pliable.
Fill each tortilla with the beef, then top with lettuce, diced tomato, grated cheddar, and cilantro. Serve with the remaining lime wedges.
