Method

  1. Mash half of the banana in a bowl until almost smooth, then slice the rest and set aside for topping.

  2. Add the rolled oats, chia seeds, ground cinnamon and a pinch of salt to the mashed banana.

  3. Stir in the peanut butter, Greek yogurt and maple syrup until everything is evenly combined.

  4. Pour in the milk and mix well, making sure no dry oats are left at the bottom.

  5. Divide between two jars or bowls, cover and refrigerate overnight (at least 6 hours).

  6. In the morning, stir, loosen with a splash of milk if needed, and top with the reserved banana slices and an extra drizzle of peanut butter.
